We always recommend getting some form of proof of posting, you can get a certificate of posting which should be free, Recorded Delivery will allow you to track that the envelope has arrived and Special Delivery allows you to have it delivered by a certain time.

Also remember to keep a copy for yourself, either the PDF version on your computer or a photocopy in case it gets lost in the post,and for reference purposes in case you get called in for a face to face. It is advisable to keep copies of all your ESA forms so you can use them in the event of a future re-assessment. Frequent assessments are part and parcel of life on ESA I am sorry to say.

It is really up to you, I am pretty certain that their are staff working at most of the ATOS mail drops on a Saturday, but if you want to be certain of a signature and have the time available to delay posting then go for the Monday.
