I have certainly heard of F2F assessments being carried out on a Saturday in the past.

25 weeks since my ESA 50 was received by Atos.
If they had sent out a F2F appointment and had not been received by myself would they notify me of the missed appointment of do they sanction your money regardless?

It depends on the circumstances and then of course there is what they should do and what they actually do.
If it was a first appointment I would expect them to just notify you of a new one.
If it is a second appointment then they should write to you to ask why you missed it but they often don't, they just return your file to the DWP as a "no show" who will likely close your claim and declare you Fit for Work.

Letters from the DWP and by association ATOS are assumed to be received as a matter of law, you would need to show that it was either not sent, it was addressed incorrectly, or that there are reasonable circumstances that it was not received.
